For Chocolate Spice Cake, add 1 teaspoon cinnamon and allspice to sifted dry mix. One cup raisins or nuts may also be added.
- 1 cup cold, prepared Idahoan® Original Mashed Potatoes
- 1 cup margarine or shortening
- 2 cups sugar
- 4 eggs
- 3 squares chocolate, melted
- 1 tsp. vanilla
- 2 cups flour, sifted
- 1 tsp. baking soda
- 1 tsp. salt
- 3⁄4 cup buttermilk
Heat oven to 375°F.
Cream together margarine or shortening and sugar. Beat in eggs one at a time.
Stir in melted chocolate and vanilla. Add prepared Idahoan® Original Mashed Potatoes and mix well.
Combine flour, baking soda and salt. Add this sifted, dry mix alternately to the batter with buttermilk. Blend well with each addition.
Grease and flour baking pans. If using 9˝ tube pan, bake for 1 hour. If using two 9˝ layer pans, bake for 20 minutes. If using 13 x 9 x 2˝ flat pan, bake for 45 minutes.

NOTE: All microwaves vary and heating times may have to be adjusted.
1. Combine 1 cup cold water, 1/3 cup milk, 1/4 teaspoon salt and 1 1/2 tablespoon margarine* in microwave-safe serving bowl.
2. Microwave on HIGH setting, approximately 2 minutes.
3. Remove from microwave.
4. Stir in potatoes to moisten. Serve.
* Butter may be substituted for margarine.

2. Heat to a boil, remove from heat.
3. Add 1/3 cup cold milk; stir in potatoes gently. Do not whip.
