Substitute any one of the following products for a variation on the same delicious meal:
- Idahoan® Original Mashed Potatoes, 5-6 servings prepared
- 1 lb ham, steak or chicken cubed into 1 1/2 inch squares
- 1 red onion
- 2 green bell peppers
- 2 red bell peppers
- 1 small can of large pineapple chunks
- 10 medium button mushrooms
- 4 wooden skewers, soaked in water for 20 minutes
Slice peppers in half, from top to bottom. Remove the stem, seeds and the white membranes on the pepper wall. Cut peppers into 1 1/2-inch squares.
Take the skin off of the onion. Slice it in half. From top to bottom, slice each half into four sections. Then slice each section in half, widthwise.
Completely drain the large pineapple chunks. Set aside.
Wash the mushrooms, and remove the stems. Set aside.
Pull the skewers out of the water. Begin layering the skewers. First, skewer a piece of meat, pushing it toward the bottom, leaving 1/2-inch gap. Then place a piece of onion on. Next, a piece of green bell pepper, and then a piece of red bell pepper. Now skewer a piece of pineapple, followed with a mushroom. Continue this process in order until there is 1/2-inch of skewer remaining at the top. Repeat this process until all skewers are full. Grill or saute the skewers on medium-high heat for about 2 minutes on each side. The skewers will take approximately 7-10 minutes to cook.
While the skewers are cooking, prepare the Idahoan® Original Mashed Potatoes as directed on package. When done, place the potatoes in a large serving dish.
When the skewers are done, criss cross them on top of the prepared potatoes, pressing down gently, so the skewers stay in place.
Serve hot and enjoy.

1. Combine water, milk, salt, and margarine* according to serving chart in microwave-safe serving bowl.
2. Microwave on high setting, approximately 2 minutes for 2 servings, 4 minutes for 4 servings.
3. Remove from microwave.
4. Stir in potatoes to moisten. Serve.
* Butter may be substituted for margarine.
