- 1 4-ounce pouch Idahoan® Roasted Garlic Mashed Potatoes
- 1/2 cup canola oil
- 5 8-inch flour tortillas, cut into 1/8-inch strips
- 1/4 cup olive oil
- 10 ounces pre-cooked, fajita seasoned chicken tenders or pre-seasoned raw chicken (about 4 breasts), cut into 1/2-inch strips
- 1 each red & green bell pepper, stem & seeds removed, sliced into strips
- 1 small yellow onion, peeled and cut into strips
- salt & pepper to taste
In large saute pan, heat canola oil on medium-high heat until hot. Fry tortilla strips until crispy. Place on paper towels. Salt and pepper to taste. Set aside.
In large saute pan, heat 1/4 cup olive oil over medium-high heat until hot.
Add pre-cooked chicken, peppers and onions. Saute together 5 minutes, stirring occasionally until vegetables are tender. Salt and pepper to taste.
If using raw chicken, cook on medium heat until no longer pink, about 10 minutes. Then add peppers and onions. Saute together 5 minutes, stirring occasionally until vegetables are tender. Salt and pepper to taste.
Top with tortilla strips and serve with Idahoan® Roasted Garlic Mashed Potatoes.
