Prepare potatoes according to package directions.Add bacon and half of shredded cheese to mashed potatoes.Remove stems from clean mushrooms and stuff with mixture. Sprinkle the top of mushrooms with remaining shredded cheese. Spread olive oil and 1 tbsp of chopped garlic on a baking sheet. Place mushrooms gently on sheet and bake at 400° for 10 minutes. Be careful not to over bake mushrooms.
